Ingredients

  • 8 slices Texas toast
  • 4 large eggs
  • 1 cup whole milk
  • 2 tbsp brown sugar
  • 1 tsp vanilla extract
  • 1/2 tsp ground cinnamon
  • Pinch of kosher salt
  • Butter for the pan

Method

  1. Whisk eggs, milk, brown sugar, vanilla, cinnamon, and salt in a wide dish until smooth.
  2. Dip each slice of Texas toast for 15 to 20 seconds per side, then let the excess drip off.
  3. Melt butter in a nonstick skillet over medium heat and cook the slices for 3 to 4 minutes per side until deeply golden.
  4. Serve right away with butter and warm maple syrup, and a dusting of powdered sugar if you like.

Notes

Keep cooked slices warm in a 200°F oven on a wire rack while you finish the rest. If you are using very fresh bread, press each slice gently with your fingertips after soaking to help the custard soak in evenly.
