Texas Roadhouse Rolls Recipe

Ingredients
  

  • 4 cups (500g) bread flour
  • 1 packet (2 1/4 tsp) instant yeast
  • 1/4 cup (50g) granulated sugar
  • 1 tsp fine sea salt
  • 1 cup (240ml) whole milk, lukewarm (110°F)
  • 1 large egg, room temperature
  • 4 tbsp (56g) unsalted butter, melted, plus more for brushing
  • 1/4 cup (20g) instant potato flakes
  • 1/2 cup (113g) unsalted butter, softened (for cinnamon butter)
  • 2 tbsp honey
  • 1 tbsp powdered sugar
  • 1/2 tsp ground cinnamon
  • pinch of fine sea salt (for cinnamon butter)

Method
 

  1. Whisk flour, yeast, sugar, salt, and potato flakes in a large bowl. Add milk, egg, and 4 tbsp melted butter. Stir into a shaggy dough.
  2. Knead on a floured surface for about 8 minutes until smooth. Place in a greased bowl, cover, and let rise 1 hour until doubled.
  3. Punch down dough, divide into 12 pieces, roll into smooth rounds, and place in a greased 9x13 inch pan.
  4. Cover and let rise 30 to 45 minutes until puffy and nearly doubled.
  5. Preheat oven to 350°F. Bake 15 to 18 minutes until golden. Brush hot rolls with melted butter immediately.
  6. Beat softened butter with honey, powdered sugar, cinnamon, and a pinch of salt until fluffy. Serve alongside the warm rolls.

Notes

The dough needs about 1 hour 30 minutes of rising time, not counted in the prep or cook times above. Instant potato flakes give the rolls their signature softness; look for the kind you just add hot water to, not the boil-till-tender variety.
