Teriyaki Salmon Bites Recipe

Ingredients
  

  • 1 lb skinless salmon fillet
  • 2 tbsp cornstarch
  • 2 tbsp neutral oil
  • 3 tbsp soy sauce
  • 2 tbsp mirin
  • 1 tbsp granulated sugar
  • 1 tsp grated fresh ginger
  • 1 small garlic clove, finely grated
  • 1 tbsp water
  • Sliced green onions and toasted sesame seeds, for garnish

Method
 

  1. In a small bowl, whisk together the soy sauce, mirin, sugar, ginger, garlic, and water until the sugar dissolves. Set aside.
  2. Pat the salmon dry and cut into 1-inch cubes. Toss with cornstarch to coat lightly, shaking off any excess.
  3. Heat oil in a large nonstick skillet over medium-high heat. Sear the salmon in a single layer for 2 to 3 minutes per side until golden and crisp. Remove to a plate.
  4. Reduce heat to medium. Pour the sauce into the skillet and let it bubble for 30 to 40 seconds until it darkens and thickens. Return the salmon and toss to coat for 1 to 2 minutes, adding a teaspoon of water if needed.
  5. Serve immediately over rice, topped with green onions and sesame seeds.

Notes

If you prefer a slightly thinner glaze, stir in an extra tablespoon of water after the sauce thickens. This recipe is best eaten right away while the salmon is hot and the coating is at its crispiest.
