Teriyaki Ground Beef Recipe

Ingredients
  

  • 1 lb lean ground beef
  • 1 tbsp vegetable oil
  • 3 tbsp soy sauce
  • 2 tbsp mirin
  • 1 tbsp brown sugar
  • 1 tsp grated fresh ginger
  • 1 garlic clove, minced
  • 1 tsp cornstarch mixed with 1 tbsp cold water
  • 1 tsp toasted sesame oil (optional)
  • Cooked jasmine rice, steamed broccoli, sliced green onions, and toasted sesame seeds, for serving

Method
 

  1. Brown the ground beef in vegetable oil over medium-high heat for about 5 minutes, breaking it up until no pink remains.
  2. Whisk together the soy sauce, mirin, brown sugar, ginger, and garlic. In a separate cup, stir the cornstarch and water to make a slurry.
  3. Pour the soy sauce mixture into the skillet and simmer for 2 minutes. Stir in the cornstarch slurry and cook 1 more minute until glossy. Remove from heat and stir in the sesame oil if using.
  4. Spoon the beef over rice, add broccoli, and garnish with green onions and sesame seeds. Serve warm.

Notes

For a spicier version, add a pinch of red pepper flakes to the sauce along with the ginger. The beef keeps beautifully in the fridge, so consider making a double batch for easy lunches.
