- Brown the ground beef in vegetable oil over medium-high heat for about 5 minutes, breaking it up until no pink remains.
- Whisk together the soy sauce, mirin, brown sugar, ginger, and garlic. In a separate cup, stir the cornstarch and water to make a slurry.
- Pour the soy sauce mixture into the skillet and simmer for 2 minutes. Stir in the cornstarch slurry and cook 1 more minute until glossy. Remove from heat and stir in the sesame oil if using.
- Spoon the beef over rice, add broccoli, and garnish with green onions and sesame seeds. Serve warm.
Notes
For a spicier version, add a pinch of red pepper flakes to the sauce along with the ginger. The beef keeps beautifully in the fridge, so consider making a double batch for easy lunches.
