Ingredients

  • 2 lb cube steak (4 pieces)
  • 1 tsp kosher salt
  • ½ tsp black pepper
  • 2 tbsp vegetable oil
  • 1 medium yellow onion, sliced thin
  • 8 oz cremini mushrooms, sliced
  • 3 tbsp all-purpose flour
  • 2 cups beef broth
  • 1 tbsp Worcestershire sauce
  • ¼ cup heavy cream (optional)
  • 2 tbsp chopped fresh parsley

Method

  1. Pat cube steaks dry, season with salt and pepper, and sear in hot oil for 3 to 4 minutes per side. Transfer to a plate.
  2. In the same skillet, sauté the onion and mushrooms over medium heat until softened, about 5 to 7 minutes.
  3. Stir in the flour and cook 1 minute, then whisk in the broth and Worcestershire. Simmer until slightly thickened, about 2 minutes.
  4. Pour the gravy into the slow cooker, nestle the steaks into the liquid, cover, and cook on low for 6 to 7 hours.
  5. Stir in the heavy cream if using, adjust salt, and serve the steaks and gravy over mashed potatoes with parsley.

Notes

The cook time on low can stretch to 8 hours if you need it, and the meat will just get more shreddable. Let the gravy rest for 5 minutes after stirring in the cream so the flavors settle.
