- Heat oven to 350°F (175°C) and butter a 9-inch springform or 8×8-inch baking pan. For the streusel, stir together flour, brown sugar, and cinnamon. Cut in cold butter until clumpy and set aside.
- Whisk together flour, sugars, baking powder, baking soda, salt, and cinnamon. In a small bowl, whisk melted butter, eggs, and sour cream. Stir wet into dry just until combined, then fold in apples.
- Scrape batter into the prepared pan and spread evenly. Sprinkle streusel over the top and press very lightly.
- Bake 50 to 55 minutes until golden and a toothpick comes out with moist crumbs. Cool in the pan on a rack for 10 minutes.
- Run a knife around the edge if using springform, then remove the sides. Slice and serve warm.
Notes
If using a square pan, line it with parchment paper with overhang for easy lifting. The cake stays moist at room temperature for two days. Let it cool completely before covering tightly if you are storing it longer.
