- Preheat the oven to 325°F (160°C) and line an 8x8-inch baking pan with parchment paper. Cream the butter and sugar until pale and fluffy, about 2 minutes.
- Add the flour and salt, mixing on low until a sandy dough forms. Press firmly into the pan and prick all over with a fork.
- Bake for 30 to 35 minutes, until the edges are lightly golden and the center is set.
- Cool in the pan for 10 minutes, then lift out and slice into rectangles. Serve warm or at room temperature.
Notes
If you don't have a mixer, cream the butter and sugar by hand with a wooden spoon until smooth and no streaks remain—it takes a bit of muscle but works just fine. These biscuits stay fresh in an airtight container for up to 5 days.
