Ingredients
  

  • 1 cup unsalted butter, softened
  • 1/2 cup granulated sugar
  • 2 cups all-purpose flour
  • 1/2 teaspoon fine sea salt

Method
 

  1. Preheat the oven to 325°F (160°C) and line an 8x8-inch baking pan with parchment paper. Cream the butter and sugar until pale and fluffy, about 2 minutes.
  2. Add the flour and salt, mixing on low until a sandy dough forms. Press firmly into the pan and prick all over with a fork.
  3. Bake for 30 to 35 minutes, until the edges are lightly golden and the center is set.
  4. Cool in the pan for 10 minutes, then lift out and slice into rectangles. Serve warm or at room temperature.

Notes

If you don't have a mixer, cream the butter and sugar by hand with a wooden spoon until smooth and no streaks remain—it takes a bit of muscle but works just fine. These biscuits stay fresh in an airtight container for up to 5 days.
