Method
- Heat oven to 350°F. Butter three 8-inch pans, line with parchment.
- Mix flour, sugar, baking powder, baking soda, salt on low. Add butter, beat to sandy crumbs.
- Mix in buttermilk, eggs, vanilla; beat 1 minute until smooth. Fold in jimmies.
- Divide batter, tap pans, bake 22–25 minutes. Cool 10 minutes, then turn out.
- Beat butter for frosting until pale. Add sugar, vanilla, salt, and cream; whip until fluffy.
- Frost cooled layers, press extra jimmies onto sides and top before serving.
Notes
The cake layers can be baked a day ahead and kept wrapped on the counter. If stacking for a party, insert three plastic straws cut to cake height into the bottom layers as a stabilizer, especially if it’s warm out. Let the cake sit at room temperature for at least 30 minutes after frosting so the buttercream sets enough to slice cleanly.
