Ingredients
  

  • 1 1/2 cups (190g) cake flour
  • 1 1/2 tsp baking powder
  • 1/4 tsp salt
  • 1/2 cup (113g) unsalted butter, softened
  • 3/4 cup (150g) granulated sugar
  • 2 large eggs, room temperature
  • 2 tsp vanilla extract
  • 1/2 cup (120ml) buttermilk, room temperature
  • 1/3 cup rainbow sprinkles
  • 3/4 cup (170g) unsalted butter, softened (for buttercream)
  • 2 cups (240g) powdered sugar
  • 2 to 3 tbsp heavy cream or milk
  • 1 tsp vanilla extract (for buttercream)
  • Food coloring of choice

Method
 

  1. Whisk the cake flour, baking powder, and salt in a medium bowl. Set aside.
  2. Beat the softened butter and sugar on medium speed for about 3 minutes until fluffy. Add the eggs one at a time, then mix in the vanilla.
  3. Preheat the oven to 350°F (175°C). Grease two 4-inch pans. Alternate adding the dry ingredients and buttermilk to the butter mixture, mixing on low. Gently fold in the sprinkles by hand. Divide batter between pans and bake 22-25 minutes. Cool completely.
  4. Beat the butter for the frosting until smooth, then gradually add powdered sugar and 2 tbsp cream. Beat 2 minutes until fluffy, add vanilla, and tint with food coloring. Fill and frost the cake with a crumb coat, chill 15 minutes, then apply the final buttercream coat. Pipe your lyric or design and serve.

Notes

The total time includes cooling the cake layers before frosting. For the cleanest lettering, chill the cake after the final buttercream coat before you pipe. Handle the layers gently—because they are small, they cool faster but can also dry out if left uncovered for too long.
