- Brown the ground beef and onion in a skillet over medium-high heat for 8 to 10 minutes, then drain. Stir in garlic, taco seasoning, salsa, black beans, and corn. Simmer 5 minutes until thickened slightly.
- Heat oven to 425°F (220°C). Pour beef mixture into a 9x13-inch dish, top with cheese, then arrange tater tots in a single layer.
- Bake 30 to 35 minutes until tater tots are golden and filling is bubbly.
- Rest 5 minutes, then top with cilantro, sour cream, and any other toppings. Serve hot.
Notes
If you’re using a glass dish, the tater tots may need 5 extra minutes to reach deep golden. For the best crisping on day two, reheat leftovers in the oven or a skillet, not the microwave.
