Method
- Preheat the oven to 425°F (220°C). Spread frozen tater tots in a single layer on a large rimmed baking sheet and bake 22 to 25 minutes, until golden and crisp.
- Meanwhile, brown the ground beef in a skillet over medium‑high heat, breaking it up, for 6 to 8 minutes. Stir in the taco seasoning and water, simmer 2 minutes, then mix in the black beans and warm through for 1 minute.
- Remove the crispy tots from the oven and pile the beef mixture on top. Cover generously with the shredded cheese.
- Switch the oven to broil. Place the pan on the top rack and broil 2 to 3 minutes, watching closely, until the cheese is melted, bubbly, and spotty brown.
- Remove from the oven and immediately top with sour cream, guac or avocado, pico de gallo, jalapeños, and cilantro. Squeeze lime over the top and serve right away.
Notes
For even crispier tots, preheat the baking sheet in the oven before adding the tots. Leftovers can be reheated in the oven or air fryer to restore the crunch.
