Tater Tot Casserole with Ground Beef Recipe

Ingredients
  

  • 1 lb ground beef (80/20)
  • 1 small yellow onion, diced
  • 2 cloves garlic, minced
  • 1 (10.5 oz) can cream of mushroom soup
  • 1 cup beef broth
  • 1/2 cup sour cream
  • 1 tsp Worcestershire sauce
  • 1 cup frozen peas and carrots
  • 1 tsp salt
  • 1/2 tsp black pepper
  • 32 oz frozen tater tots
  • 2 cups shredded cheddar cheese

Method
 

  1. Preheat the oven to 400°F (200°C). Brown the ground beef with the diced onion and minced garlic in a skillet over medium-high heat, about 8 minutes, until no pink remains.
  2. Stir in the cream of mushroom soup, beef broth, sour cream, Worcestershire sauce, frozen peas and carrots, salt, and pepper. Simmer about 5 minutes, until thickened.
  3. Spread the beef mixture evenly into a 9x13 inch baking dish.
  4. Arrange the frozen tater tots in a single layer on top and bake for 30 minutes, until golden and crisp.
  5. Scatter the shredded cheddar over the tots and broil for 2 to 3 minutes, until melted and bubbling. Serve hot.

Notes

If you're assembling ahead, keep the filling and tots separate in the fridge and only layer them together right before baking, otherwise the tots lose their crisp edge. This also freezes well as a fully assembled, unbaked casserole for up to 3 months.
