- Whisk soy sauce, pineapple juice, brown sugar, garlic, ginger, and sriracha together and marinate the chicken for 10 minutes at room temperature while preheating a grill to medium high.
- Pat the chicken dry, oil the grates, and grill for 6 to 7 minutes per side until 165°F internal. Rest for 5 minutes.
- Combine cabbage, pineapple tidbits, mayonnaise, lime juice, and salt in a bowl and set aside.
- Brush cut sides of rolls with melted butter and toast on the grill or in a skillet until light golden, about 60 to 90 seconds.
- Slice the chicken across the grain, pile onto bottom rolls, top with slaw, and close with the top rolls. Serve immediately.
Notes
If you are short on time, pound the chicken to an even half inch before marinating and the cook time drops to about 4 to 5 minutes per side. The slaw can be made a few hours ahead and stored in the fridge.
