Tangy Dairy Free Lemon Bars Recipe

Ingredients
  

  • 1/2 cup (1 stick) dairy free butter, softened
  • 1 cup all-purpose flour
  • 1/4 cup granulated sugar (for crust)
  • 1/4 teaspoon fine sea salt
  • 3 large eggs, at room temperature
  • 1 cup granulated sugar (for filling)
  • 1/2 cup fresh lemon juice
  • 2 tablespoons lemon zest
  • Powdered sugar, for dusting

Method
 

  1. Preheat oven to 350°F. Line an 8x8-inch pan with parchment. Beat dairy free butter and 1/4 cup sugar until fluffy. Mix in flour and salt until a dough forms.
  2. Press dough evenly into pan. Bake 15 to 18 minutes until edges are lightly golden.
  3. Whisk eggs and 1 cup sugar until pale, then stir in lemon juice and zest until smooth.
  4. Pour filling over hot crust. Bake 20 to 25 minutes until set with a slight jiggle in the center.
  5. Cool completely on a rack, then refrigerate at least 2 hours. Lift out, dust with powdered sugar, and slice into squares.

Notes

The bars need to chill for at least 2 hours after baking to set up properly, so plan ahead. That time is not counted in the prep or cook time. For a slightly softer, more custard-like center, pull the bars from the oven when the jiggle is still a little loose.
