Tandoori Chicken Marinade Recipe

Ingredients
  

  • 1 cup plain whole-milk yogurt
  • 2 tbsp lemon juice
  • 1 tbsp ginger-garlic paste
  • 2 tsp ground cumin
  • 2 tsp ground coriander
  • 2 tsp smoked paprika
  • 1 tsp ground turmeric
  • 1 tsp garam masala
  • 1 tsp salt
  • ½ tsp cayenne pepper
  • 2 lbs boneless skinless chicken thighs
  • A few drops red food coloring (optional)

Method
 

  1. Stir together cumin, coriander, smoked paprika, turmeric, garam masala, salt, and cayenne in a small bowl.
  2. Whisk yogurt, lemon juice, and ginger-garlic paste in a large bowl until smooth. Whisk in the spice mix until no streaks remain.
  3. Add chicken, massage the marinade into every piece, cover, and refrigerate at least 2 hours.
  4. Remove chicken from fridge 20 minutes before cooking. Grill over high heat about 5 to 6 minutes per side, or roast at 400°F for 15 to 18 minutes, broiling briefly at the end, until charred and 165°F inside. Rest 3 to 4 minutes, then slice and serve.

Notes

Marinating for at least 2 hours is key; overnight makes the chicken even more tender. If using bone-in pieces, add cooking time and check the temperature near the bone.
