- Preheat oven to 350°F (175°C) and line two baking sheets with parchment paper. In a large bowl, beat the softened butter, brown sugar, and granulated sugar until light and fluffy, about 2 minutes.
- Beat in the tahini, egg, and vanilla until smooth.
- Add the flour, baking soda, and salt, fold until just combined, then stir in the chocolate chips.
- Scoop rounded tablespoons of dough onto the prepared sheets, spacing 2 inches apart. Bake for 10 to 12 minutes, until edges are set and golden.
- Sprinkle warm cookies with flaky sea salt, let rest on the sheet for 5 minutes, then transfer to a wire rack to cool.
Notes
For thicker cookies, chill the dough for 30 minutes before baking. Make sure your tahini is well-stirred before measuring.
