Method
- Preheat oven to 400°F (200°C). Scrub potatoes, prick with a fork, rub with 1 tbsp oil, and bake directly on rack with a sheet pan below until tender, 45 to 50 minutes.
- In a skillet over medium-high heat, brown the beef, about 6 to 8 minutes. Drain fat, stir in taco seasoning, beans, corn, and a splash of water. Cook 2 minutes.
- Place baked potatoes on sheet pan. Slice lengthwise and fluff with a fork. Fill with beef mixture, top with cheese, and bake 5 minutes until melted.
- Finish with avocado, salsa, sour cream, and cilantro. Serve hot.
Notes
The taco filling can be made a day ahead and reheated with a splash of water before stuffing. If the sweet potatoes are especially large, you may need an extra 10 minutes in the oven, so check tenderness with a knife.
