Taco Stuffed Sweet Potato Recipe

Ingredients
  

  • 4 medium sweet potatoes
  • 1 tbsp olive oil, plus more for skillet
  • 1 lb ground beef
  • 2 tbsp taco seasoning
  • 1 (15 oz) can black beans, drained and rinsed
  • 1 cup corn kernels
  • 1 cup shredded sharp cheddar cheese
  • Toppings: diced avocado, salsa, sour cream, chopped cilantro

Method
 

  1. Preheat oven to 400°F (200°C). Scrub potatoes, prick with a fork, rub with 1 tbsp oil, and bake directly on rack with a sheet pan below until tender, 45 to 50 minutes.
  2. In a skillet over medium-high heat, brown the beef, about 6 to 8 minutes. Drain fat, stir in taco seasoning, beans, corn, and a splash of water. Cook 2 minutes.
  3. Place baked potatoes on sheet pan. Slice lengthwise and fluff with a fork. Fill with beef mixture, top with cheese, and bake 5 minutes until melted.
  4. Finish with avocado, salsa, sour cream, and cilantro. Serve hot.

Notes

The taco filling can be made a day ahead and reheated with a splash of water before stuffing. If the sweet potatoes are especially large, you may need an extra 10 minutes in the oven, so check tenderness with a knife.
