- Preheat oven to 375°F and bring a large pot of salted water to a boil. In a large skillet over medium-high heat, cook the ground beef and onion until the meat is browned, about 7 minutes, adding the garlic in the last minute. Drain fat if needed.
- Stir in taco seasoning, then add black beans, corn, green chiles, tomato sauce, and water. Simmer 4 minutes until thickened.
- Cook spaghetti until just al dente, drain, and add to the skillet. Toss well to coat, then transfer to a 9x13 inch baking dish. Top with 1 1/2 cups cheese, cover with foil, and bake 20 minutes.
- Remove foil, sprinkle remaining 1/2 cup cheese on top, and bake uncovered 5 to 6 more minutes until melted and golden. Let stand 5 minutes, then top with tomatoes, sour cream, cilantro, and green onions before serving.
Notes
For deeper flavor, use a homemade taco seasoning blend or add a pinch of smoked paprika with the packet. If the top needs more browning, run the dish under the broiler for 1 minute at the end, but watch it closely so the cheese doesn't burn.
