- Heat oil in a large skillet over medium-high. Brown the beef with a pinch of salt and pepper, 5-7 minutes. Drain excess fat, leaving about 1 tablespoon.
- Lower heat to medium, add onion, cook 3-4 minutes until softened. Stir in garlic and taco seasoning, cook 1 minute. Add beans, corn, tomatoes (with juices), and tomato sauce. Bring to a simmer.
- Reduce heat to low, cover, and simmer 10 minutes, stirring once or twice, until slightly thickened.
- Sprinkle cheese evenly over the top, cover, and let melt on low heat for about 2 minutes, until bubbly.
- Remove from heat, scatter crushed tortilla chips on top and add any fresh toppings. Serve right from the skillet.
Notes
Let the skillet rest a minute off the heat so the cheese sets slightly. You can swap the black beans for pinto beans or kidney beans if that’s what you have on hand. The chips are best added just before serving so they keep their crunch.
