Taco Rice Skillet Recipe

Ingredients
  

  • 1 lb ground beef
  • 1 small onion, diced
  • 2 cloves garlic, minced
  • 2 tbsp taco seasoning
  • 1 cup long-grain white rice
  • 1 (14.5 oz) can diced tomatoes
  • 1 ½ cups beef broth
  • 1 (15 oz) can black beans, drained and rinsed
  • 1 cup frozen corn kernels
  • 1 cup shredded Mexican blend cheese
  • Fine sea salt and black pepper

Method
 

  1. Brown the beef in a skillet over medium-high heat, season with salt and pepper, then drain all but 1 tbsp fat.
  2. Reduce heat to medium, cook the onion 3 minutes, add garlic and taco seasoning for 30 seconds, then stir in rice and toast 1 minute.
  3. Add tomatoes with juices, broth, beans, and corn. Bring to a boil, cover, reduce heat to low, and simmer 16-18 minutes until rice is tender.
  4. Off heat, sprinkle cheese on top, cover again to melt 2 minutes, then serve with desired toppings.

Notes

If your taco seasoning is salt-free or you are using unsalted broth, taste the dish after adding the tomatoes and adjust the salt level. The cheese adds saltiness too, so go easy at first.
