Taco Rice Bowl Recipe

Ingredients
  

  • 1 lb ground beef
  • 1 small yellow onion, diced
  • 2 garlic cloves, minced
  • 2 tbsp taco seasoning
  • 1 cup long-grain white rice, rinsed
  • 1 (14.5 oz) can diced tomatoes, with juices
  • 1 (15 oz) can black beans, drained and rinsed
  • 1 cup beef broth
  • 1 cup shredded cheese
  • Salt and freshly ground black pepper, to taste

Method
 

  1. Brown the beef and onion in a large skillet over medium-high heat, breaking up the meat, until the beef is no longer pink and the onion is soft, about 5 minutes. Drain excess fat.
  2. Stir in the garlic, taco seasoning, and rinsed rice. Cook for 1 minute, stirring often, until fragrant.
  3. Add the diced tomatoes with their juices, black beans, beef broth, salt, and pepper. Bring to a boil, then cover and simmer on low for 15 minutes, until the rice is tender.
  4. Remove from heat, sprinkle cheese on top, cover, and let it melt for 2 to 3 minutes. Serve with your favorite toppings.

Notes

This recipe works with store-bought or homemade taco seasoning. If using a seasoning packet, taste before adding salt because some brands are saltier. For a complete meal, top with sour cream, avocado, and crushed tortilla chips.
