Ingredients

  • 1 lb ground beef
  • 1 medium yellow onion, diced
  • 2 cloves garlic, minced
  • 1 (4 oz) can diced green chiles
  • 1 packet (1 oz) taco seasoning
  • 1 cup chunky salsa
  • 1 (8 oz) can tomato sauce
  • 1 cup low-sodium chicken broth
  • 8 oz rotini pasta
  • 2 cups shredded Mexican blend cheese
  • Sour cream, chopped cilantro, and sliced jalapeños for serving (optional)

Method

  1. Preheat oven to 400°F (200°C). In a large skillet over medium-high heat, cook the ground beef and onion until no pink remains, about 5 minutes. Stir in garlic and green chiles and cook 30 seconds. Drain fat.
  2. Stir in taco seasoning, salsa, tomato sauce, and broth. Bring to a simmer, add rotini, and cook 2 minutes, until slightly thickened. Remove from heat.
  3. Pour mixture into a 9x13-inch baking dish, top with cheese, and cover tightly with foil. Bake 15 minutes.
  4. Remove foil, switch oven to broil, and broil 3 to 5 minutes until cheese is golden and pasta is tender, watching closely.
  5. Let casserole rest 5 minutes. Scoop into bowls and top with sour cream, cilantro, and jalapeños if using.

Notes

This casserole needs a quick rest before serving so the sauce thickens enough to hold its shape. If your dish is shallow, keep a close eye under the broiler; the cheese can burn quickly at the edges.
