Taco Chili Recipe

Ingredients
  

  • 1 lb ground beef
  • 1 (1 oz) packet taco seasoning
  • 1 (15 oz) can black beans, drained and rinsed
  • 1 (10 oz) can diced tomatoes with green chiles
  • 1 cup frozen corn
  • 1 cup water

Method
 

  1. Brown the ground beef in a skillet over medium-high heat, breaking it up, until no longer pink, about 6 to 8 minutes. Drain and transfer to a slow cooker.
  2. Add the drained black beans, undrained tomatoes with green chiles, corn, taco seasoning, and water. Stir to combine.
  3. Cover and cook on low for 6 hours or high for 3 hours. Taste, adjust salt, then ladle into bowls and add your favorite toppings.

Notes

If you skip browning the beef, break it up well in the slow cooker before cooking. Leftovers thicken as they sit, so add a splash of water when reheating. A homemade taco blend (2 tbsp chili powder, 1 tsp cumin, 1 tsp paprika, ½ tsp garlic powder, ½ tsp onion powder, ¼ tsp oregano) works in place of the packet.
