- Cook the ground beef, onion, and garlic in a skillet over medium-high heat, breaking up the meat, for 6 to 8 minutes until no pink remains. Drain excess fat.
- Stir in the taco seasoning, diced tomatoes, beans, corn, and sour cream until combined. Remove from heat.
- Spread a thin layer of filling in a 9x13-inch baking dish. Arrange half the tortilla wedges on top, then layer with half the remaining filling and 1 cup cheese. Repeat with the rest of the tortillas, filling, and cheese.
- Bake at 375°F (190°C) for 20 minutes, until bubbly and cheese is golden in spots.
- Let the casserole rest 5 minutes, then slice and serve with your choice of fresh toppings.
Notes
Letting the casserole sit after it comes out of the oven is the difference between a clean square and a scoop of slop. Even 5 minutes helps the layers firm up. If you like extra texture, leave a few tortilla wedges peeking through the cheese so they crisp up instead of staying soft.
