Taco Bell Grilled Cheese Burrito Recipe

Ingredients
  

  • 1 lb ground beef (85/15)
  • 2 tbsp taco seasoning
  • 1/2 cup nacho cheese sauce
  • 1/4 cup sour cream (for sauce)
  • 2 tbsp mayonnaise
  • 2 tbsp pickled jalapeños, chopped
  • 1 tbsp pickled jalapeño brine
  • 1/4 tsp garlic powder
  • 1/4 cup sour cream (for layering)
  • 1 cup shredded Mexican cheese blend
  • 2 large burrito-size flour tortillas
  • 1/2 cup crushed tortilla chips
  • 1/2 cup shredded low-moisture mozzarella or cheddar
  • 1 tbsp butter or oil

Method
 

  1. Brown the beef in a skillet over medium-high heat for 6 to 8 minutes. Drain fat, add taco seasoning and 2 tbsp water, and simmer 2 minutes.
  2. Blend 1/4 cup sour cream, mayonnaise, jalapeños, brine, garlic powder, and salt until smooth.
  3. Warm nacho cheese sauce. Lay a tortilla flat and layer nacho cheese, beef, jalapeño sauce, sour cream, shredded cheese blend, and tortilla strips. Fold and roll tightly.
  4. Butter a medium skillet. Sprinkle 2 tbsp mozzarella or cheddar onto the pan, place burrito seam-side down, and cook 2 to 3 minutes until cheese is golden and crisp. Repeat on the other side with another 2 tbsp cheese.
  5. Cut each burrito in half diagonally and serve immediately with extra jalapeño sauce.

Notes

If the tortilla feels stiff, warm it in a dry skillet for 15 seconds per side so it rolls without cracking. The meat can be cooked a day ahead and reheated before assembling.
