- Brown the beef in a skillet over medium-high heat for 6 to 8 minutes. Drain fat, add taco seasoning and 2 tbsp water, and simmer 2 minutes.
- Blend 1/4 cup sour cream, mayonnaise, jalapeños, brine, garlic powder, and salt until smooth.
- Warm nacho cheese sauce. Lay a tortilla flat and layer nacho cheese, beef, jalapeño sauce, sour cream, shredded cheese blend, and tortilla strips. Fold and roll tightly.
- Butter a medium skillet. Sprinkle 2 tbsp mozzarella or cheddar onto the pan, place burrito seam-side down, and cook 2 to 3 minutes until cheese is golden and crisp. Repeat on the other side with another 2 tbsp cheese.
- Cut each burrito in half diagonally and serve immediately with extra jalapeño sauce.
Notes
If the tortilla feels stiff, warm it in a dry skillet for 15 seconds per side so it rolls without cracking. The meat can be cooked a day ahead and reheated before assembling.
