Ingredients

  • 1 (16 oz) can refried beans
  • 1/2 cup shredded mild cheddar cheese
  • 1/4 cup finely diced white onion
  • 4 (10-inch) flour tortillas
  • 2 tbsp tomato paste
  • 1/2 cup water
  • 1 tsp white vinegar
  • 1/2 tsp onion powder
  • 1/2 tsp garlic powder
  • 1/2 tsp paprika
  • 1/4 tsp cumin
  • 1/4 tsp cayenne pepper
  • 1/4 tsp salt

Method

  1. In a small bowl, stir together tomato paste, water, vinegar, onion powder, garlic powder, paprika, cumin, cayenne, and salt until smooth.
  2. In a small saucepan over medium heat, combine refried beans with the red sauce. Cook, stirring often, for 5 to 7 minutes until hot and thickened.
  3. Warm each tortilla in a dry skillet over medium heat for about 20 seconds per side, then keep covered with a towel.
  4. Spoon 1/2 cup bean mixture onto the center of a warm tortilla. Top with 2 tbsp cheese and 1 tbsp onion. Fold the sides in, then roll tightly from the bottom up. Serve immediately.

Notes

For the most authentic taste, use mild cheddar and do not skip the raw onion. If your beans get too thick while simmering, add a splash of water to loosen them.
