- Preheat oven to 375°F. Brown beef and onion in a skillet over medium-high heat for 6-8 minutes, adding garlic for the last 30 seconds.
- Lower heat to medium, stir in taco seasoning and ¼ cup water, and cook 2 minutes. Fold in black beans, corn, and salsa. Remove from heat.
- Spread 1 ½ cups crushed chips in a 9x13 dish. Top with beef mixture, then 1 ¼ cups cheese. Add remaining chips and cheese.
- Bake 20-25 minutes until bubbly and golden. Broil 1-2 minutes for extra crispness if desired.
- Let rest 5 minutes, then scoop onto plates with your favorite toppings.
Notes
For the crunchiest top, add the final layer of chips and cheese right before baking. If you assemble the casserole ahead, keep those two layers off and bake a few minutes longer from the fridge.
