Sweet Potato Sheet Pan Dinner Recipe

Ingredients
  

  • 2 large sweet potatoes (about 1½ lbs), peeled and cut into ¾-inch cubes
  • 2 bell peppers (any color), stemmed, seeded, and sliced into strips
  • 1 red onion, cut into wedges
  • 12 oz smoked chicken sausage (such as andouille), sliced into 1-inch pieces or halved lengthwise
  • 3 tbsp olive oil
  • 1 tsp smoked paprika
  • ½ tsp garlic powder
  • 1 tsp kosher salt
  • Black pepper, to taste
  • Juice of ½ lemon
  • 2 tbsp chopped fresh parsley

Method
 

  1. Preheat oven to 425°F (220°C). Toss sweet potato cubes, bell pepper strips, and red onion wedges with olive oil, smoked paprika, garlic powder, salt, and pepper. Spread in a single layer on a large rimmed baking sheet.
  2. Nestle sausage pieces among the vegetables, cut side down.
  3. Roast for 25 to 30 minutes, tossing halfway through, until sweet potatoes are fork-tender with golden, caramelized edges and peppers are soft.
  4. Remove from oven. Squeeze lemon juice over the pan, scatter parsley on top, and toss to combine. Serve warm.

Notes

To cut down on prep time at dinner, chop the vegetables up to a day ahead and store them in the fridge. Toss with oil and seasonings just before roasting.
