Sweet Potato Carrot Soup Recipe

Ingredients
  

  • 2 tbsp olive oil
  • 1 medium yellow onion, diced
  • 2 cloves garlic, minced
  • 1 lb sweet potatoes, peeled and cut into 1-inch cubes
  • 3 medium carrots, sliced into ½-inch rounds
  • 4 cups vegetable broth
  • ½ tsp fine sea salt
  • ¼ tsp black pepper
  • 1-inch piece fresh ginger, peeled and grated

Method
 

  1. Heat the olive oil in a large pot over medium heat. Add the onion and cook 5 minutes until soft. Stir in the garlic and ginger, cook 30 seconds.
  2. Add the sweet potatoes, carrots, broth, salt, and pepper. Bring to a boil, then cover and simmer on medium-low for 15 to 20 minutes until the vegetables are very tender.
  3. Remove from heat and blend with an immersion blender until completely smooth. Season to taste.
  4. Ladle into bowls, top with a drizzle of olive oil or a dollop of yogurt, and serve hot.

Notes

Let the soup cool a few minutes before blending if using a stand blender. The soup thickens as it rests, so add a splash of broth when reheating.
