Sweet Potato Burger Bowls Recipe

Ingredients
  

  • 1 ½ lbs sweet potatoes, peeled and cut into ½-inch cubes
  • 2 tbsp olive oil
  • 1 tsp garlic powder, divided
  • 1 tsp smoked paprika, divided
  • 1 lb ground beef
  • ½ tsp onion powder
  • 4 slices cheddar cheese
  • 4 cups chopped romaine lettuce
  • ½ cup diced tomato
  • ¼ cup dill pickle chips, roughly chopped
  • ¼ cup mayonnaise
  • 2 tbsp ketchup
  • 1 tbsp yellow mustard
  • 1 tbsp sweet pickle relish
  • ½ tsp white vinegar

Method
 

  1. Preheat oven to 425°F (220°C) and line a baking sheet. Toss sweet potatoes with olive oil, ½ tsp garlic powder, ½ tsp smoked paprika, and salt. Roast 22 to 25 minutes, stirring once, until crispy and tender.
  2. Brown ground beef in a skillet over medium-high heat with remaining garlic powder, smoked paprika, onion powder, salt, and pepper. Cook 6 to 8 minutes, drain, top with cheese, cover, and let melt for 1 minute.
  3. Whisk together mayonnaise, ketchup, mustard, relish, and vinegar until smooth. Taste and adjust.
  4. Divide lettuce among bowls, top with sweet potatoes, cheesy beef, tomato, pickles, and special sauce. Serve immediately.

Notes

The special sauce gets even better after sitting in the fridge for an hour, so if you have a few minutes, make it first and let it chill while everything else cooks.
