- Preheat the oven to 350°F and line an 8×8 inch baking pan with parchment. Mash the sweet potato in a large bowl until completely smooth.
- Add the cocoa powder, almond butter, and maple syrup. Stir with a spatula until a thick, glossy batter forms.
- Spread the batter evenly into the prepared pan. Bake for 18 to 22 minutes, until the top is set and a toothpick comes out with a few moist crumbs.
- Cool completely on a wire rack, then lift out and slice into 9 brownies.
Notes
These brownies firm up a lot as they cool, so do not cut into them while they are still warm or they will fall apart. The flavor deepens after a few hours in the fridge, making them a great make-ahead treat.
