Sweet Potato Black Bean Burgers Recipe

Ingredients
  

  • 1 large sweet potato (about 1 lb), peeled and cut into 1-inch chunks
  • 1 (15-oz) can black beans, drained, rinsed, and patted very dry
  • 1/2 cup finely chopped red onion
  • 2 cloves garlic, minced
  • 1 tsp smoked paprika
  • 1 tsp ground cumin
  • 1/2 tsp kosher salt
  • 1/4 cup all-purpose flour
  • 2 tbsp neutral oil
  • 4 burger buns

Method
 

  1. Preheat oven to 400°F (200°C). Toss sweet potato chunks with 1 tbsp oil and 1/4 tsp salt. Spread on a baking sheet and roast 20 to 25 minutes until fork-tender. Let cool 5 minutes.
  2. Place black beans in a large bowl and mash with a fork until chunky, leaving some whole beans.
  3. Add roasted sweet potato, onion, garlic, paprika, cumin, remaining 1/2 tsp salt, and flour. Stir until just combined; the mix should feel tacky and clump easily.
  4. Divide into 4 equal portions and shape into patties about 3/4 inch thick. Heat the remaining 1 tbsp oil in a skillet over medium heat. Cook patties 4 to 5 minutes per side until deep brown.
  5. Toast buns, stack patties with your favorite toppings, and serve right away.

Notes

Nutrition is estimated for one burger with bun, no additional toppings. The sweet potato can be roasted up to 2 days ahead; bring to room temperature before mixing. If the mixture feels too wet, stir in flour 1 tablespoon at a time.
