Sweet Corn Chicken Rice Bowl Recipe

Ingredients
  

  • 1 lb boneless, skinless chicken thighs, cut into bite-sized pieces
  • 2 cups fresh or frozen corn kernels
  • 1 cup uncooked jasmine rice
  • 2 tbsp olive oil, divided
  • 1 tsp chili powder
  • ½ tsp ground cumin
  • ½ tsp garlic powder
  • ½ tsp kosher salt, plus more to taste
  • ¼ cup sour cream
  • 1 chipotle pepper in adobo sauce, minced, plus 1 tsp adobo sauce
  • 2 tbsp fresh lime juice
  • Toppings: diced avocado, fresh cilantro, crumbled cotija or feta cheese, lime wedges

Method
 

  1. Rinse rice until water runs clear. Combine with 1½ cups water and a pinch of salt in a saucepan. Bring to a boil, then reduce heat to low, cover, and simmer 15 minutes. Let stand covered 5 minutes.
  2. Toss chicken with chili powder, cumin, garlic powder, and ½ tsp salt. Heat 1 tbsp oil in a skillet over medium-high heat, add chicken, and cook undisturbed 5 minutes until browned. Stir and cook 2-3 minutes more until cooked through. Transfer to a plate.
  3. Add remaining 1 tbsp oil to the skillet and raise heat to high. Add corn and spread in one layer. Cook 2-3 minutes without stirring, then stir and cook 1-2 minutes until charred. Season with salt.
  4. Stir together sour cream, chipotle, adobo sauce, lime juice, and a pinch of salt. Thin with water if needed.
  5. Divide rice among bowls. Top with chicken, corn, avocado, cilantro, and cheese. Drizzle crema and serve with lime wedges.

Notes

Cook the rice up to 2 days ahead and reheat it when you are ready to eat. The crema can be made earlier but will thicken, so stir in a little water before serving.
