- Heat the oven to 425°F. Trim and halve the brussels sprouts, then toss with oil, salt, and pepper on a large sheet pan. Spread into a single layer, cut side down, and roast for 22 to 25 minutes until deeply browned and tender.
- While the sprouts roast, whisk together the sweet chili sauce, soy sauce, rice vinegar, and garlic in a small bowl.
- Transfer the hot sprouts to a mixing bowl and pour the glaze over them. Toss gently to coat every piece.
- Spoon the glazed sprouts onto a serving plate, scatter with sesame seeds and scallion, and serve immediately.
Notes
Those loose outer leaves that fall off during trimming turn into crispy, snackable bits on the pan. Do not discard them. If your sweet chili sauce is very thick, thin it with a half teaspoon of warm water before tossing so it coats the sprouts more evenly.
