- Press the tofu for 10-15 minutes, then cut into 1-inch cubes. Toss the cubes with the 3 tbsp cornstarch and a pinch of salt until evenly coated.
- Heat the vegetable oil in a large nonstick skillet over medium-high heat. Add the tofu in a single layer and fry for 4-5 minutes per side until deeply golden and crisp. Transfer to a plate.
- In the same skillet, sauté the bell pepper and onion for 2 minutes until softened. Add the garlic and ginger and cook 30 seconds.
- Whisk together the ketchup, rice vinegar, soy sauce, sugar, 1/4 cup water, and the remaining 1 tbsp cornstarch. Pour into the skillet with the vegetables and pineapple. Simmer for 2-3 minutes until thickened.
- Return the tofu to the skillet, toss gently to coat, heat through for 1 minute, and serve right away over rice.
Notes
If you prefer a thinner sauce, add an extra 2 to 3 tablespoons of water when you stir in the slurry. The sauce tightens as it cools, so serve it hot off the stove. For a little heat, stir 1 teaspoon of sriracha into the ketchup mixture.
