- Heat the oil in a large skillet over medium heat. Add the onion and caraway seeds (if using) and cook, stirring occasionally, until softened, about 5 minutes.
- Add the cabbage in handfuls, sprinkling the salt over it, and cook for about 5 minutes, tossing often, until wilted and reduced in volume by half.
- Stir together the vinegar and brown sugar until dissolved, then pour over the cabbage. Add the black pepper, stir well, and cook for 5 to 7 minutes until the cabbage is tender and the sauce reduces to a glossy coating.
- Taste and adjust with more salt, sugar, or vinegar as needed. Spoon into a warm bowl and serve immediately.
Notes
The dish can sit off the heat for a few minutes before serving; the flavor deepens as it rests. Leftovers keep well and reheat gently with a splash of water.
