Method
- Cream the butter and sugar on medium speed for 2 to 3 minutes until pale and fluffy.
- Beat in the egg, vanilla, and almond extract until just combined.
- Whisk together the flour, cornstarch, baking powder, and salt; mix into the wet ingredients on low just until streaks disappear.
- Turn the dough out, shape into a flat disc, wrap tightly, and refrigerate at least 1 hour.
- Preheat oven to 350°F. Roll dough 1/4 inch thick, cut shapes, and bake on parchment-lined sheets for 8 to 10 minutes; cool on a rack.
- Whisk powdered sugar, milk, vanilla, and optional corn syrup for a glaze; ice the completely cooled cookies and let set for at least 2 hours.
Notes
Chill time is not included in the prep time. The dough can be made a day ahead and chilled overnight. For the shiniest icing, add 1 tbsp light corn syrup and let cookies dry uncovered.
