Ingredients
  

  • 1 cup (2 sticks) unsalted butter, softened
  • 1 cup granulated sugar
  • 1 large egg, at room temperature
  • 2 tsp vanilla extract
  • 1/2 tsp almond extract (optional)
  • 3 cups all-purpose flour, spooned and leveled
  • 2 tbsp cornstarch
  • 1 tsp baking powder
  • 1/2 tsp fine sea salt

Method
 

  1. Cream the butter and sugar on medium speed for 2 to 3 minutes until pale and fluffy.
  2. Beat in the egg, vanilla, and almond extract until just combined.
  3. Whisk together the flour, cornstarch, baking powder, and salt; mix into the wet ingredients on low just until streaks disappear.
  4. Turn the dough out, shape into a flat disc, wrap tightly, and refrigerate at least 1 hour.
  5. Preheat oven to 350°F. Roll dough 1/4 inch thick, cut shapes, and bake on parchment-lined sheets for 8 to 10 minutes; cool on a rack.
  6. Whisk powdered sugar, milk, vanilla, and optional corn syrup for a glaze; ice the completely cooled cookies and let set for at least 2 hours.

Notes

Chill time is not included in the prep time. The dough can be made a day ahead and chilled overnight. For the shiniest icing, add 1 tbsp light corn syrup and let cookies dry uncovered.
