Swamp Potatoes Recipe

Ingredients
  

  • 1 lb ground beef
  • 2 lbs russet potatoes, peeled and cut into ½‑inch cubes
  • 1 can (10.5 oz) condensed cream of mushroom soup
  • 1 cup shredded sharp cheddar cheese
  • 1 small yellow onion, diced
  • 1 tsp garlic powder
  • ½ tsp kosher salt
  • ¼ tsp black pepper

Method
 

  1. Brown the ground beef and onion in a skillet over medium‑high heat until the meat is cooked through, about 6 to 8 minutes. Drain off excess fat.
  2. In a 4‑ to 6‑quart Crockpot, combine the cream of mushroom soup, garlic powder, salt, and pepper. Stir in the potatoes and the beef mixture until everything is evenly coated.
  3. Cover and cook on high for 3 to 4 hours, or on low for 5 to 6 hours, until the potatoes are fork‑tender.
  4. Sprinkle the cheddar on top, cover, and let the Crockpot sit for 10 minutes so the cheese melts. Stir gently to distribute.
  5. Scoop into bowls and serve hot. Top with fresh parsley if you like.

Notes

If you prefer to cook on low, start checking the potatoes at 5 hours. The sauce tightens as it sits, so loosen leftovers with a little milk when reheating.
