Summer Sugar Cookies Recipe

Ingredients
  

  • 2 1/4 cups all-purpose flour
  • 1/2 tsp baking powder
  • 1/4 tsp salt
  • 3/4 cup unsalted butter, softened
  • 3/4 cup granulated sugar
  • 1 large egg, at room temperature
  • 1 tsp vanilla extract
  • 2 tsp lemon zest
  • 1 1/2 cups powdered sugar
  • 2 to 3 tbsp fresh lemon juice
  • 1 to 2 tsp milk (if needed)
  • food coloring (optional)

Method
 

  1. Beat butter and sugar on medium speed until fluffy, about 2 minutes. Scrape the bowl as needed.
  2. Mix in egg, vanilla, and lemon zest until smooth. Whisk flour, baking powder, and salt separately, then stir into the wet ingredients just until a soft dough forms.
  3. Roll dough between parchment sheets to 1/4-inch thickness. Cut shapes and place on parchment-lined baking sheets.
  4. Bake at 350°F for 10 to 12 minutes, until edges are barely golden. Cool on the pan 2 minutes, then transfer to a rack.
  5. Whisk powdered sugar with lemon juice to a drizzle consistency. Tint if desired, spread over cooled cookies, and add sprinkles right away.

Notes

If the dough softens while you work, a 10-minute chill will make rolling and cutting easier. The icing will set for stacking in about 15 minutes. For a softer bite, bake cookies slightly thicker and pull them from the oven before any browning shows on top.
