Method
- Beat butter and sugar on medium speed until fluffy, about 2 minutes. Scrape the bowl as needed.
- Mix in egg, vanilla, and lemon zest until smooth. Whisk flour, baking powder, and salt separately, then stir into the wet ingredients just until a soft dough forms.
- Roll dough between parchment sheets to 1/4-inch thickness. Cut shapes and place on parchment-lined baking sheets.
- Bake at 350°F for 10 to 12 minutes, until edges are barely golden. Cool on the pan 2 minutes, then transfer to a rack.
- Whisk powdered sugar with lemon juice to a drizzle consistency. Tint if desired, spread over cooled cookies, and add sprinkles right away.
Notes
If the dough softens while you work, a 10-minute chill will make rolling and cutting easier. The icing will set for stacking in about 15 minutes. For a softer bite, bake cookies slightly thicker and pull them from the oven before any browning shows on top.
