Ingredients
  

  • 1 1/2 cups grated zucchini, squeezed dry
  • 1/2 cup mashed very ripe banana
  • 1/4 cup unsweetened applesauce
  • 1/3 cup neutral oil
  • 2 large eggs, room temperature
  • 1 teaspoon vanilla extract
  • 1 3/4 cups white whole wheat flour or all-purpose flour
  • 1 teaspoon baking soda
  • 1/2 teaspoon baking powder
  • 1 teaspoon ground cinnamon
  • 1/4 teaspoon fine sea salt
  • 1/2 cup chopped walnuts or pecans, optional

Method
 

  1. Grate the zucchini, then squeeze in a clean towel until nearly dry.
  2. Whisk together mashed banana, applesauce, oil, eggs, and vanilla.
  3. In another bowl, stir together flour, baking soda, baking powder, cinnamon, and salt.
  4. Fold dry ingredients into the wet mixture until just combined, then gently fold in the zucchini and nuts.
  5. Pour into a parchment-lined 9×5-inch loaf pan and bake at 350°F for 50–55 minutes, until a toothpick comes out clean.
  6. Cool in the pan 10 minutes, then lift out and cool completely on a rack before slicing.

Notes

The loaf tastes sweeter after it sits a day. Wrap it up once cooled and the flavors mellow and blend overnight.
