Method
- Whisk the flour, sugar substitute, baking powder, and salt in a large bowl.
- In a separate bowl, whisk the melted butter, eggs, milk, and vanilla until smooth.
- Pour the wet mixture into the dry and stir just until combined. Gently fold in the blueberries.
- Scoop the batter into a lined 12-cup muffin tin, filling each three quarters full. Bake at 375°F (190°C) for 18 to 22 minutes, until a toothpick comes out clean.
- Let the muffins cool in the pan for 5 minutes, then transfer to a wire rack. Serve warm or at room temperature.
Notes
Cool the muffins completely before storing them in an airtight container, or the steam will make the tops soggy. The 5-minute rest in the pan is not included in the cook time because it happens after baking.
