Sugar-Free Banana Bread Recipe

Ingredients
  

  • 3 large very ripe bananas, heavily spotted or black
  • 1/3 cup melted coconut oil or unsalted butter
  • 2 large eggs, at room temperature
  • 1 tsp vanilla extract
  • 1 1/2 cups whole wheat flour
  • 1 tsp baking soda
  • 1/2 tsp ground cinnamon
  • 1/4 tsp fine sea salt
  • 1/2 cup chopped walnuts or pecans (optional)

Method
 

  1. Preheat oven to 350°F and grease a 9×5-inch loaf pan. Mash bananas in a large bowl, then whisk in oil, eggs, and vanilla until smooth.
  2. In a separate bowl, whisk flour, baking soda, cinnamon, and salt. Make a well in the center.
  3. Pour wet ingredients into the well and fold with a spatula just until no dry streaks remain. Stir in nuts if using. Scrape batter into pan.
  4. Bake 50-55 minutes until a toothpick comes out clean. Cool in pan 10 minutes, then turn out onto a rack. Cool completely before slicing.

Notes

The bananas must be very ripe for sweetness; lightly spotted bananas will taste mild. If the loaf is underbaked in the center, tent with foil and bake 5-10 more minutes. For a moister crumb, wrap the cooled bread overnight before slicing.
