Method
- Whisk flour and salt, work in cold butter until pea-sized, add ice water slowly, then shape into two discs and chill at least 1 hour.
- Toss apple slices with cornstarch, lemon juice, cider, cinnamon, nutmeg, and salt until coated.
- Roll one dough disc to a 12-inch circle, line a 9-inch pie dish, and keep cold.
- Fill with apples, top with second dough round, trim and crimp edges, cut steam vents, and brush with egg wash if using.
- Bake at 400°F for 20 minutes, reduce heat to 375°F, and bake 40 to 50 minutes more until golden and bubbly, then cool completely before slicing.
Notes
Chilling the dough is hands-off time and not counted in prep, so plan ahead. If your apples taste especially tart, a drizzle of honey stirred into the filling is a simple fix that still keeps refined sugar out.
