- In a large bowl, cream the butter and sugar until light and fluffy, about 2 minutes.
- Beat in the egg and vanilla until smooth. Add flour, baking powder, and salt, then stir just until combined.
- Preheat oven to 350°F (175°C) and line a baking sheet with parchment. Roll dough into tablespoon-sized balls, coat in the remaining 1/4 cup sprinkles, and place 2 inches apart on the sheet.
- Bake until edges are set and centers look slightly underdone, 10 to 12 minutes. Cool on the sheet for 2 minutes, then transfer to a wire rack.
Notes
If you want thicker, taller cookies, chill the rolled dough balls for 30 minutes before baking. The baked cookies stay soft for days when stored with a slice of bread in the container.
