Method
- Combine sugar and water in a small saucepan over medium low heat, stirring until dissolved, about 2 minutes. Remove from heat and stir in vanilla and almond extracts.
- Brew 2 shots espresso or ½ cup strong coffee. Pour into a mug and stir in the syrup.
- Heat milk to 150-160°F, froth until doubled in volume, and pour over the espresso mixture. Spoon foam on top and serve.
Notes
If you like a stronger almond note, add an extra tiny drop of almond extract to the finished latte, but taste first because it can turn bitter quickly. The syrup can be made a few days ahead and stored in the fridge.
