- Beat 1 cup butter and 1 cup sugar until pale and fluffy, about 2 minutes.
- Mix in egg and 2 teaspoons vanilla on low. Add flour, baking powder, and salt, then mix until dough forms.
- Flatten dough into a disc, wrap tightly, and refrigerate 30 minutes.
- Preheat oven to 350°F. Roll tablespoon-sized dough balls, press into a greased mini muffin tin to form cups.
- Bake 8 to 10 minutes until edges are lightly golden. Cool in pan 5 minutes, then transfer to a rack to cool fully.
- Beat 1/2 cup butter until creamy. Add powdered sugar, 1 teaspoon vanilla, and 1 tablespoon cream. Whip 2 to 3 minutes, adding more cream if needed. Pipe buttercream into cooled cups.
Notes
Chill time is not counted in the prep time above. The dough needs at least 30 minutes to firm up. If you make the cups a day ahead, store them unfrosted and fill them just before serving so the cookie stays crisp.
