Stuffed Zucchini Boats Recipe

Ingredients
  

  • 4 medium zucchini (about 8 oz each)
  • 1 lb ground turkey or lean ground beef
  • 1 small yellow onion, diced
  • 3 cloves garlic, minced
  • 1 cup marinara sauce
  • 1 tsp Italian seasoning
  • 1/2 tsp salt
  • 1/4 tsp black pepper
  • 1 cup shredded low-moisture mozzarella
  • 2 tbsp grated Parmesan
  • 2 tsp olive oil

Method
 

  1. Heat oven to 400°F (200°C). Halve zucchini lengthwise, scoop out seeds leaving a 1/4 inch shell, rub with a little olive oil and salt, and place on a baking sheet.
  2. Cook ground meat in olive oil in a skillet over medium-high for 6 minutes, breaking it up. Add onion, cook 3 minutes. Add garlic, cook 30 seconds.
  3. Stir in marinara, Italian seasoning, salt, and pepper. Simmer for 5 minutes until thickened.
  4. Spoon filling into zucchini shells and top with mozzarella and Parmesan.
  5. Bake 15–18 minutes until zucchini is tender and cheese is bubbly, then broil 1–2 minutes for browning. Serve hot.

Notes

If your zucchini are on the larger side, they may need a few extra minutes in the oven. To avoid watery boats, make sure the shell walls are thick enough and don’t skip the step of simmering the sauce down until it’s not runny.
