Ingredients

  • 20 jumbo pasta shells
  • 1 tbsp olive oil
  • 1 lb ground beef (80/20)
  • 1/2 yellow onion, diced
  • 3 cloves garlic, minced
  • 24 oz jarred marinara sauce
  • 15 oz whole milk ricotta
  • 1 large egg
  • 1 1/2 cups shredded mozzarella, divided
  • 1/2 cup grated parmesan
  • 3 tbsp chopped fresh parsley, divided
  • 1/2 tsp salt
  • 1/4 tsp black pepper
  • 1/2 tsp dried Italian seasoning

Method

  1. Boil the jumbo shells in salted water for 9 minutes, drain, and toss with olive oil.
  2. Brown the ground beef and onion for 6 minutes, add garlic and marinara sauce, and simmer for 8 minutes.
  3. Mix the ricotta, egg, 3/4 cup mozzarella, parmesan, 2 tbsp parsley, salt, pepper, and Italian seasoning into a smooth filling.
  4. Spread half the sauce in a 9x13 inch dish, fill the shells, and arrange them over the sauce.
  5. Preheat the oven to 375°F (190°C), top with remaining sauce and mozzarella, bake covered 20 minutes then uncovered 10 minutes, and finish with the remaining parsley.

Notes

You can assemble the shells a day ahead, cover, and refrigerate unbaked; just add about 10 extra minutes to the covered bake time since the dish will be starting cold. If a few shells tear while boiling, don't worry, just patch them together with a bit of extra filling once they're in the dish.
