Stuffed Pepper Bowls Recipe

Ingredients
  

  • 1 lb ground beef
  • 1 medium onion, diced
  • 2 bell peppers, diced
  • 3 cloves garlic, minced
  • 1 cup long-grain white rice
  • 1 (15 oz) can diced tomatoes
  • 1 ½ cups chicken broth
  • 1 tsp Italian seasoning
  • ½ tsp salt
  • ¼ tsp black pepper
  • 1 cup shredded mozzarella cheese

Method
 

  1. Heat a large skillet over medium-high heat. Add the ground beef and onion, breaking up the meat, and cook until browned, about 5-6 minutes. Drain excess fat.
  2. Stir in the bell peppers and garlic. Cook for 3-4 minutes until peppers begin to soften but still have a bite.
  3. Add the rice, diced tomatoes with their juices, chicken broth, Italian seasoning, salt, and pepper. Bring to a boil, then reduce heat to low, cover, and simmer for 15 minutes.
  4. Remove from heat. Sprinkle mozzarella on top, cover, and let sit 2 minutes until melted. Serve hot, garnished with parsley if desired.

Notes

For a juicier bowl, add an extra ½ cup of broth and let it cook uncovered the last 2 minutes. The cheese will get bubbly and golden under a broiler, but watch it closely so it doesn’t burn.
