Ingredients

  • 12 medium jalapeño peppers, halved lengthwise
  • 8 oz cream cheese, softened
  • 1 cup shredded sharp cheddar
  • 4 slices bacon, cooked until crisp and crumbled
  • ½ tsp garlic powder
  • Salt and black pepper to taste
  • 2 tbsp extra shredded cheddar

Method

  1. Preheat oven to 400°F. Slice the jalapeños in half lengthwise and scoop out the seeds and membranes, leaving the stems intact.
  2. Combine the cream cheese, 1 cup cheddar, crumbled bacon, garlic powder, salt, and pepper in a bowl and mix until smooth.
  3. Fill each pepper half with the cheese mixture, mounding it slightly, then top with the reserved 2 tbsp cheddar.
  4. Arrange peppers on a parchment-lined baking sheet and bake 15 to 18 minutes until bubbly and golden in spots.
  5. Let them cool a minute, then transfer to a plate and serve warm.

Notes

These are best right out of the oven while the cheese is still molten, so serve them as soon as they’re cool enough to handle. If you’re making them for a crowd, double the recipe and bake in two batches for the freshest result.
